Sweet potato, chicken, and quinoa soup
Ingredients:
- 1 large onion, diced
- 2 TBSP olive oil
- 5 cups chicken broth
- 1½ pounds chicken breasts
- 1 cup quinoa
- 3½ cups or about 2 pound large sweet potatoes
- 1 can (15.25 ounces) black beans
- 1 can kidney beans
- 1 can (14.25 ounces) diced tomatoes
- 1 teaspoon minced garlic
- 1 tablespoon dried minced onion
- 1 tablespoon chili powder
- 1/4 teaspoon red pepper flakes
- 1 heaping teaspoon smoked paprika
- salt and ground black pepper to taste
Directions:
- Saute the onion in oil.
- Rinse quinoa.

Peel and cube sweet potatoes.
- Rinse the black beans.
- Add chicken, quinoa, potatoes, beans to crockpot.
- Add in the undrained tomatoes, minced garlic, chili seasoning, and chicken broth.
- Cook on high for 3-5 hours
- Shred the chicken and stir all the ingredients together.
- Use a potato masher to mash the soup to thicken it up.
- Add salt and pepper.
