Sweet potato, chicken, and quinoa soup
Ingredients:
1 large onion, diced
2 TBSP olive oil
5 cups chicken broth
1½ pounds chicken breasts
1 cup quinoa
3½ cups or about 2 pound large sweet potatoes
1 can (15.25 ounces) black beans
1 can kidney beans
1 can (14.25 ounces) diced tomatoes
1 teaspoon minced garlic
1 tablespoon dried minced onion
1 tablespoon chili powder
1/4 teaspoon red pepper flakes
1 heaping teaspoon smoked paprika
salt and ground black pepper to taste
Directions:
Saute the onion in oil.
Rinse quinoa.
Peel and cube sweet potatoes.
Rinse the black beans.
Add chicken, quinoa, potatoes, beans to crockpot.
Add in the undrained tomatoes, minced garlic, chili seasoning, and chicken broth.
Cook on high for 3-5 hours
Shred the chicken and stir all the ingredients together.
Use a potato masher to mash the soup to thicken it up.
